Perfect for a cozy meal during soup season or whenever you're craving a nice tomato soup!

Directions

  1. Wash and dry 2 cartons cherry tomatoes, 2-3 heirloom tomatoes, 5-7 slicing or roma tomatoes.
  2. Slice your big tomatoes into fours.
  3. Wash and cut a red and orange bell pepper.
  4. Chop a yellow onion into quarters
  5. Peel 2 bulbs of garlic (no need to chop).
  6. Place everything on a baking tray and season with Italian seasonings, salt, pepper, and add 5-6 sun dried tomatoes.
  7. Drizzle in high quality olive oil.
  8. Roast in the oven at 375°F for 45 minutes.
  9. Transfer to a pot add a handful of basil (don’t roast the basil it will burn) and emulsify or to your blender to mix.
  10. Back on the stove to stay warm, add in a 1/3 cup of half and half, or a cup of milk.
  11. Add a parmesan rind and 1 cup of Parmesan cheese.
  12. Heat on low while you make grilled cheese!
  13. Take the parm rind out, serve it on up!
  14. Add mozzarella balls for some fun!
  15. Enjoy!
