Spaghetti al Limone

Enjoy this zesty spaghetti with shrimp!

- Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Scoop out 1 cup of pasta water, then drain the pasta.
- While the pasta cooks, season shrimp with salt and pepper. In a large skillet over medium heat, heat olive oil, then add half of the lemon zest and cook for 30 seconds. Add the shrimp and cook for about 90 seconds per side until just cooked through. Transfer the shrimp to a plate and set aside.
- Add wine, a pinch of salt, and freshly cracked black pepper to the skillet. Bring to a simmer, scraping down browned bits from the pan. Cook until wine has reduced by half, then add cooked pasta and add 1/4 cup of the reserved pasta water. Remove from the heat, then add the cubed butter and the Parmigiano Reggiano, tossing until a smooth sauce forms. Return the shrimp to the pasta, toss, then serve and top with parsley and more cheese and the rest of the lemon zest.
